Our Origin, Weardale 2012

Founded by Glenn & Terri Crookes in Weardale, we’ve been bringing small-batch biltong to the UK since 2012, made using grass-fed UK/Irish and EU beef and time-honoured air-drying methods, all produced in a source-accredited, state-of-the-art manufacturing facility.

Biltong was part memory, part mission. For our family, it wasn’t only a delicious link to our South-African roots; it became the protein-rich snack we kept reaching for, day after day. From those first small batches in 2012, we committed to three things: trusted UK/Irish and EU grass-fed beef, time-honoured spice and marinade, and slow air-drying for days—not shortcuts. That promise still guides every pack we make.

The Biltong Man stands for strength, grit and finishing what you start—our Bull mark is a reminder to bring that spirit to everyday life. We champion stories of people who “give life horns”, and we craft snacks that fuel the pursuit: on the pitch, on the trail, or simply getting through a busy day.

Every batch is small-scale and closely monitored from spice to slice. Our gluten-conscious approach is measured, not marketing: our malt vinegar is laboratory-tested to coeliac-safe standards, and ‘The Original’ range uses apple cider vinegar for those who prefer an alternative. How long does biltong last once opened? +

4-6 days is the standard consumption recommendation. However, correct storing of your biltong can extend its longevity.

How should I store my biltong once opened? +

The recommended way to store our biltong, if you don't want to share it, is to 'hide’ your Biltong in a cool, dry, well ventilated place out of direct sunlight. A kitchen cupboard away from your oven would be just fine!

What cuts of beef do you use? +

Biltong is made with sustainably sourced grass fed UK, Irish and EU Beef. The cut used is called Silverside, best known and used for biltong.

Is Biltong a cooked meat? +

Biltong is best described as a ‘dried’ or ‘cured’ meat. Biltong firstly goes through a process of being cured and marinated, then to be hung on hooks to air dry before being sliced, packaged and ready to eat. Yum!

Why doesn’t my biltong have the pinkish tone seen in some photos? +

Oxidation. As soon as the biltong stick is sliced, the surface of the biltong is open to air, oxidation takes place altering the pink tone to turn to more of a brown tone. It’s a perfectly natural reaction. But, the flavoursome taste, texture and tenderness won’t be affected.

We only buy the best quality beef that is traceable from grass fed herds from British and Irish farms. 

Our delicious Biltong recipes have been created by us with much passion & care, further complementing our ancestor’s recipes to capture mouth-watering flavours, using the BEST of cuts of BRITISH, IRISH and EU BEEF infused with the SPLENDOUR of SOUTH AFRICAN SPICES”.

Using state of the art curing ovens, exceeding Health and Safety Standards whilst safeguarding the flavour and tradition of homemade Biltong we take pride in handcrafting each delicious stick. It takes us approximately 2.3 kilograms of the finest beef to produce 1 kilogram of The Biltong’s Mans BEST. Our cuts of silverside beef are infused with salt, black pepper, coriander, celery, chilli, garlic, smoked paprika, ground cloves, malt/apple cider vinegar, and of course A TOUCH OF THE BILTONG MANS MAGIC!
