What is the ‘white dotted’ substance on my biltong?
DON’T WORRY! It’s very common and poses no danger for consumption. The ‘white bits’ are in fact just salt used to marinate the beef trying to rehydrate due to humidity. A handy and easy tip to remove this salt is to just wipe it away with a little cider vinegar. Just as delicious, we promise!

Biltong is best described as a ‘dried’ or ‘cured’ meat. Biltong firstly goes through a process of being cured and marinated, then to be hung on hooks to air dry before being sliced, packaged and ready to eat. Yum!
Why doesn’t my biltong have the pinkish tone seen in some photos?
Oxidation. As soon as the biltong stick is sliced, the surface of the biltong is open to air, oxidation takes place altering the pink tone to turn to more of a brown tone. It’s a perfectly natural reaction. But, the flavoursome taste, texture and tenderness won’t be affected.
If you would like your biltong pink, drop us a email and we could arrange for you to buy a whole stick, slice it yourself as and when you want some biltong. We can’t however guarantee you’ll be able to fight the temptation of demolishing the full stick. GOOD LUCK!
